If you like coconut you are going to love these! With coconut and dark chocolate you are getting loads of vitamins, minerals and good fat in each tasty little ball!
Dessicated coconut (unsweetened)
Xylitol to taste (if above is unsweetened)
Good Quality Dark Chocolate 85/90% cocoa solids
In a bowl mix coconut & xylitol if using. Slowly add drops of coconut milk, just enough to bind. With damp hands form into small balls. Refridgerate for 20 mins. Melt chocolate in bain marie or microwave. Take each ball and roll carefully in the chocolate. Refridgerate again for min 10 mins. Take out and enjoy!!
